Tu Vez Latino Culinary Academy: Frita Cubana

There are certain meals that can transport you back to a certain time and place. That’s the magic of food. If you ask most fancy-schmancy chefs what their favorite meal is, the answer would probably surprise you. It usually isn’t some small-portioned molecular gastronomy bit of food science, but their mom’s roast chicken or a cheeseburger from a local diner. That’s because we crave that which reminds us of happier times. This recipe is like that for me. It’s the Cuban take on the hamburger called a frita. Basically, it is a hamburger made with beef and chorizo and topped with julienne fries. It reminds me of being a little kid in Miami, enjoying summer fun with my family. It’s also eat your own face delicious.

Frita Cubana

3 packages of soft dinner rolls. You can bake some too if you want to be overachiever guy.
2 cloves of delicious stinky garlic, minced
¼ onion minced. I like to use the sweet vidalias
1 lb ground beef. I like to use ground sirloin to be fancy
½ lb ground chorizo, king of sausages
½ cup bread crumbs
¼ cup milk. Get whole milk for this, ya pansy
2 Tbsp chili sauce. As spicy as you like
1 Tbsp paprika, the sweet kind
2 tsp. Worcestershire sauce, or as my grandmother used to say “woostechechire
½ tsp. cumin
1 beaten egg
½ tsp black pepper
1 tsp  salt
Vegetable oil
2 large potatoes, peeled and finely grated. You, know like you do cheese

Mix the salt, pepper, cumin, egg, Worcestershire, paprika, chili, beef, chorizo, bread crumbs, milk, onion, and garlic into a nice meaty mash. Make little meatballs about the size of a big golfball. Heat about two inches of vegetable oil in a frying pan and fry up the shredded potato. In a frita, the fries go inside the burger. Cuban food scientists discovered that this makes the burger 200% more yum. If you want to be lazy you can buy potato sticks at the store. But we WILL call you lazy. After that’s done, take the potatoes out and let them drain on a paper towel. Next stick the meat patties in a pan with a little oil and smoosh them down until they are flat. Fry them until they are fully cooked. Serve them on the dinner rolls and top those bad boys with the potatoes. Now eat them and enjoy life.
